Chickpea Pasta Delight

Ingredients:

– 12 ounces (340g) organic whole wheat or gluten-free pasta (spaghetti, linguine, or your choice)

– 1 teaspoon organic smoked paprika

– 1/2 teaspoon organic crushed red pepper flakes (adjust to taste)

– Salt and black pepper to taste

– 1/4 cup organic fresh parsley, chopped (for garnish)

– Organic lemon wedges (for serving)

Instructions:

  1. **Cook the Pasta:**

– Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

  1. **Prepare the Sauce:**

– In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent, about 5 minutes.

  1. **Combine Pasta and Sauce:**

– Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly with the sauce. Cook for an additional 2-3 minutes to heat through.

  1. **Add Olives:**

– Stir in the black olives and cook for another 2 minutes.

  1. **Serve:**

– Serve the Chickpea Pasta Delight hot, garnished with fresh parsley and a squeeze of lemon juice.
